Blueberry and peach are both soft, low-acid fruits, which would normally be a problem — two sweet components with nothing to cut across them accumulate on the palate fast. The ice is what rescues it, supplying the clearing that neither fruit provides. Blueberry brings a faint skin-like astringency that gives the blend slightly more structure than a straight peach would have, but the cooling is doing most of the work here.
