Cherry divides into two entirely different flavours and it is worth knowing which you are buying. Dark cherry is deep and slightly bitter with an almond note underneath; the confectionery kind is bright, sweet and unmistakably artificial. SKE leans towards the second, and the ice is structural rather than decorative — a confectionery cherry has almost no acidity, so cooling is the only thing preventing the sweetness from coating the palate within a day.
